Thirty years of serenity, simplicity and simpatia” (sympathy and understanding)...

In 1970 Adriana Luce Chiara asked me "How would you like the small lake?"
At that time, where the lake is now, there was field of golden grain.
I put myself to work, or better, I made the local craftsmen work.
A perfectly small round lake came to be realized.
From this beginning, many initiatives began to form, like the rays of a beam of sunlight: the organic farm, the transformation and conservation of organic products, the renovated farmhouses and the replenishment of the environment, the local kitchen, and the traditional handicrafts... This is how "Il Gaidello" was born.
These realities, all rewarding, had to be supported by work, to give an economic and moral justification, (in the sense of values) to be worth the effort.

After thirty years, I found myself writing down these thoughts on a November evening.
A couple was leaving the restaurant. They thanked me for the good food, but, above all, they manifested their gratefulness for the hospitality they had received.
It was then that I understood Gaidello’s long path, with all of its’ experiences, its’ experiments and its’ realizations, it has given me a gift: the understanding of what is the most important thing for me:... that is, welcoming and encountering guests to exchange serenity, simplicity and “simpatia” (sympathy and understanding)…..
